The encoding of the output subtitle file will be UTF-8. Learn how to watch a movie with subtitles encoded in UTF-8.

Be very careful when you choose the encoding of your source file! Chinese subtitles are often encoded in "Unicode" (which is not the same thing as UTF-8 or UTF-16). In order to convert such subtitles, you will first need to manually change the file encoding. This can be easily done by using a good text editor, such as Sublime Text. Open your subtitle file and then choose "File" → "Save with Encoding" → "UTF-8".
